Fried Rice with Leftovers
Ingredients:
- 2 cups cooked white rice (preferably leftover)
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, shredded
- 1/2 cup frozen peas
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon sesame oil (optional)
Instructions:
- Heat a wok or large skillet over medium-high heat. Add the oil and swirl to coat the pan.
- Add onion and garlic and stir-fry until fragrant and the onion is translucent, about 1-2 minutes.
- Add the carrot and peas and stir-fry for another minute.
- Push the vegetables to the side of the pan and add the eggs. Scramble the eggs with a spatula until they are cooked through.
- Add the rice and stir-fry for 2-3 minutes, until everything is heated through and evenly combined.
- Add the soy sauce, salt, black pepper, and sesame oil (if using) and stir to combine.
- Remove from heat and serve hot.

- 1 tablespoon oyster sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon sesame oil (optional)
Instructions:
- In a large wok or skillet, heat the oil over medium-high heat. Add the chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
- Add the onion and garlic to the wok and stir-fry until fragrant and the onion is translucent, about 1-2 minutes.
- Add the carrot and peas and stir-fry for another minute.
- Push the vegetables to the side of the pan and add the eggs. Scramble the eggs with a spatula until they are cooked through.
- Add the rice, soy sauce, oyster sauce, salt, black pepper, and sesame oil (if using) and stir to combine.
- Add the chicken back into the wok and stir-fry for another minute or two, until everything is heated through and evenly combined.
- Remove from heat and serve hot.
