Ingredients:

  • 6 oz rice noodles (linguini-width)
  • 1 tbsp oil (peanut or vegetable oil)
  • 2 garlic cloves , minced
  • 2 shallots , thinly sliced
  • 2 eggs
  • 9-12 large shrimp , peeled and deveined
  • 1/2 cup firm tofu , cubed
  • 1/4 cup peanuts , finely chopped
  • 1 cup bean sprouts
  • 1/2 red bell pepper , thinly sliced
  • 1/2 yellow bell pepper , thinly sliced
  • 2 green onions , sliced into 1-inch pieces
  • 2 tbsp chopped cilantro , divided
  • 1/4 tsp crushed red pepper flakes (optional)
  • 4 lime wedges

Instructions:

  1. Soak rice noodles according to package instructions until pliable.
  2. Heat a large wok or skillet over medium-high heat. Add oil, garlic, and shallots, and cook until fragrant, about 1 minute.
  3. Add eggs and scramble gently until almost set. Add shrimp, tofu, and cook until shrimp are pink and tofu is golden brown, about 3 minutes.
  4. Add noodles, peanuts, sprouts, bell peppers, green onions, half the cilantro, and red pepper flakes (if using). Toss everything together and cook until the noodles are hot and cooked through, about 3 minutes.
  5. Divide among 4 plates, garnish with remaining cilantro and serve with lime wedges.

Ingredients:

  • 1 1/2 tbsp tamarind concentrate
  • 1/3 cup palm sugar
  • 3 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 2 tsp chili powder
  • 4 tbsp oil
  • 3 cloves garlic , chopped
  • 1/2 cup chopped tofu
  • 1/2 lb chicken thighs , sliced
  • 1/2 lb rice noodles (1/8 inch or similar width)
  • 1/2 cup water
  • 1/4 cup peanuts , chopped to coarse powder
  • 1 cup bean sprouts
  • 1 green onion , sliced into thin rounds

Instructions:

  1. Mix tamarind concentrate, palm sugar, fish sauce, oyster sauce, and chili powder together in a bowl. Set aside.
  2. Heat a wok or large frying pan over high heat. Add oil, then garlic, and stir-fry until garlic is golden brown and fragrant.
  3. Add chicken and stir-fry until chicken is golden brown and cooked through.
  4. Add the noodles and stir-fry for 2-3 minutes, until the noodles have loosened and are evenly coated with the sauce.
  5. Add water, and stir-fry until the water is absorbed by the noodles and the noodles are cooked to your desired firmness.
  6. Stir in tofu, bean sprouts, and green onions, and toss everything together until heated through.
  7. Garnish with peanuts and serve.
